- 1 ½ lbs (680 g) cooked shredded chicken (rotisserie or poached)
- 1 cup salsa (red or verde)
- 2 tsp taco seasoning (or homemade mix: chili powder, cumin, paprika, garlic powder, onion powder, salt)
- 1 ½ cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)
- ½ cup prepared queso dip (store-bought or homemade)
- 6–8 small flour tortillas
- 1 cup diced tomatoes
- 1 cup diced avocado
- ½ cup diced red onion
- ½ cup fresh cilantro, chopped
- Lime wedges (for serving)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix shredded chicken with salsa and taco seasoning. Spread evenly over a lined sheet pan.
- Drizzle queso dip over the chicken.
- Sprinkle shredded cheese evenly on top.
- Bake for 10–12 minutes, until cheese is melted and bubbly.
- Warm tortillas.
- Spoon cheesy chicken mixture into tortillas.
- Top with tomatoes, avocado, red onion, and cilantro.
- Serve with lime wedges.
