Queso Chicken Tacos (Sheet-Pan Style) are a delicious and easy-to-make dish featuring shredded chicken topped with queso and cheese, all served in warm tortillas.


Ingredients

  • 1 ½ lbs (680 g) cooked shredded chicken (rotisserie or poached)
  • 1 cup salsa (red or verde)
  • 2 tsp taco seasoning (or homemade mix: chili powder, cumin, paprika, garlic powder, onion powder, salt)
  • 1 ½ cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)
  • ½ cup prepared queso dip (store-bought or homemade)
  • 68 small flour tortillas
  • 1 cup diced tomatoes
  • 1 cup diced avocado
  • ½ cup diced red onion
  • ½ cup fresh cilantro, chopped
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shredded chicken with salsa and taco seasoning. Spread evenly over a lined sheet pan.
  3. Drizzle queso dip over the chicken.
  4. Sprinkle shredded cheese evenly on top.
  5. Bake for 10–12 minutes, until cheese is melted and bubbly.
  6. Warm tortillas.
  7. Spoon cheesy chicken mixture into tortillas.
  8. Top with tomatoes, avocado, red onion, and cilantro.
  9. Serve with lime wedges.
