Instructions

  1. Preheat oven to 180°C (350°F). Line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar until pale, thick, and tripled in volume (5 minutes).
  3. Mix in vanilla.
  4. Sift flour, baking powder, and salt. Gently fold into egg mixture.
  5. Add warm milk and purple coloring, fold until smooth.
  6. Spread batter evenly in pan and bake 10–12 minutes until springy.
  7. Invert hot cake onto a kitchen towel dusted with powdered sugar.
  8. Peel off parchment, roll cake with towel while warm, and let cool.
  9. Beat cream cheese, powdered sugar, and vanilla until smooth.
  10. Whip cold cream to stiff peaks.
  11. Fold whipped cream into cream cheese mixture.
  12. Unroll cooled cake, spread cream filling evenly, then re-roll.
  13. Frost outside with whipped cream or buttercream.
  14. Cover with colorful sprinkles.
