Instructions
- Preheat oven to 180°C (350°F). Line a 10×15-inch jelly roll pan with parchment paper.
- Beat eggs and sugar until pale, thick, and tripled in volume (5 minutes).
- Mix in vanilla.
- Sift flour, baking powder, and salt. Gently fold into egg mixture.
- Add warm milk and purple coloring, fold until smooth.
- Spread batter evenly in pan and bake 10–12 minutes until springy.
- Invert hot cake onto a kitchen towel dusted with powdered sugar.
- Peel off parchment, roll cake with towel while warm, and let cool.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip cold cream to stiff peaks.
- Fold whipped cream into cream cheese mixture.
- Unroll cooled cake, spread cream filling evenly, then re-roll.
- Frost outside with whipped cream or buttercream.
- Cover with colorful sprinkles.
