- 3 cups all-purpose flour
- 1 packet (2 ¼ tsp) instant yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup warm water (110°F / 45°C)
- 2 tablespoons unsalted butter, melted
- 1 ½ cups shredded mozzarella (or cheddar, or a mix)
- ½ cup cream cheese, softened
- ½ cup cooked bacon or pepperoni bits (optional)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 6 cups water
- ¼ cup baking soda
- 1 egg, beaten (for egg wash)
- Coarse sea salt, for sprinkling
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions
- In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter. Knead for 6–8 minutes until smooth and elastic.
- Cover and let rise in a greased bowl for 1 hour, until doubled in size.
- In a small bowl, mix mozzarella, cream cheese, bacon/pepperoni (if using), garlic powder, and onion powder. Set aside.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Punch down dough and divide into 10–12 equal pieces.
- Flatten each piece into a disc, place a spoonful of filling in the center, and pinch edges tightly to seal into a ball.
- Bring water and baking soda to a gentle boil.
- Drop each dough ball in for 20–30 seconds, then remove with a slotted spoon. Place on the baking sheet.
- Brush each bomb with egg wash. Sprinkle with coarse salt and parsley.
- Bake for 15–18 minutes, until golden brown and puffed.
- Allow to cool slightly before serving (filling will be very hot). Enjoy warm with dipping sauces like mustard, ranch, or marinara.
Notes
- For a vegetarian option, omit bacon or pepperoni.
- These can be made ahead and frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
