Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (110°F / 45°C)
  • 2 tablespoons unsalted butter, melted
  • 1 ½ cups shredded mozzarella (or cheddar, or a mix)
  • ½ cup cream cheese, softened
  • ½ cup cooked bacon or pepperoni bits (optional)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 6 cups water
  • ¼ cup baking soda
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt, for sprinkling
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and melted butter. Knead for 6–8 minutes until smooth and elastic.
  3. Cover and let rise in a greased bowl for 1 hour, until doubled in size.
  4. In a small bowl, mix mozzarella, cream cheese, bacon/pepperoni (if using), garlic powder, and onion powder. Set aside.
  5. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  6. Punch down dough and divide into 10–12 equal pieces.
  7. Flatten each piece into a disc, place a spoonful of filling in the center, and pinch edges tightly to seal into a ball.
  8. Bring water and baking soda to a gentle boil.
  9. Drop each dough ball in for 20–30 seconds, then remove with a slotted spoon. Place on the baking sheet.
  10. Brush each bomb with egg wash. Sprinkle with coarse salt and parsley.
  11. Bake for 15–18 minutes, until golden brown and puffed.
  12. Allow to cool slightly before serving (filling will be very hot). Enjoy warm with dipping sauces like mustard, ranch, or marinara.

Notes

  • For a vegetarian option, omit bacon or pepperoni.
  • These can be made ahead and frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
