Delightful and easy-to-make Pistachio Pineapple Cake Bars that combine the flavors of pistachio and pineapple in a delicious dessert.

- 1 box yellow cake mix (15.25 oz)
- 3 large eggs
- ½ cup vegetable oil
- 1 cup crushed pineapple (with juice)
- 1 box instant pistachio pudding mix (3.4 oz)
- 1 cup milk (cold)
- 1 cup whipped topping (Cool Whip or homemade whipped cream)
- 1 box instant pistachio pudding mix (3.4 oz)
- 1 ½ cups cold milk
- 1 cup whipped topping
- ½ cup chopped pistachios
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Mix cake mix, eggs, oil, and pineapple (with juice) until smooth.
- Pour into pan and bake 30–35 minutes, until golden and a toothpick comes out clean.
- Cool completely.
- In a bowl, whisk pistachio pudding mix with milk until thickened.
- Fold in whipped topping.
- Spread evenly over cooled cake.
- Prepare second pudding mix with milk.
- Fold in whipped topping.
- Spread over pistachio layer.
- Sprinkle with chopped pistachios.
- Chill at least 2 hours before cutting into bars.
Notes
- Ensure the cake is completely cooled before adding the pistachio layer.
- For a richer flavor, use homemade whipped cream instead of Cool Whip.
- Store leftovers in the refrigerator for up to 3 days.
