Delightful and easy-to-make Pistachio Pineapple Cake Bars that combine the flavors of pistachio and pineapple in a delicious dessert.


Ingredients

  • 1 box yellow cake mix (15.25 oz)
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup crushed pineapple (with juice)
  • 1 box instant pistachio pudding mix (3.4 oz)
  • 1 cup milk (cold)
  • 1 cup whipped topping (Cool Whip or homemade whipped cream)
  • 1 box instant pistachio pudding mix (3.4 oz)
  • 1 ½ cups cold milk
  • 1 cup whipped topping
  • ½ cup chopped pistachios

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix cake mix, eggs, oil, and pineapple (with juice) until smooth.
  3. Pour into pan and bake 30–35 minutes, until golden and a toothpick comes out clean.
  4. Cool completely.
  5. In a bowl, whisk pistachio pudding mix with milk until thickened.
  6. Fold in whipped topping.
  7. Spread evenly over cooled cake.
  8. Prepare second pudding mix with milk.
  9. Fold in whipped topping.
  10. Spread over pistachio layer.
  11. Sprinkle with chopped pistachios.
  12. Chill at least 2 hours before cutting into bars.

Notes

  • Ensure the cake is completely cooled before adding the pistachio layer.
  • For a richer flavor, use homemade whipped cream instead of Cool Whip.
  • Store leftovers in the refrigerator for up to 3 days.
