- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup extra virgin olive oil
- 3 large eggs
- 2 tsp vanilla extract
- ¾ cup chopped pistachios
- 1 cup blackberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix olive oil, eggs, and vanilla extract until smooth.
- Gradually fold the wet mixture into the dry ingredients until just combined; be careful not to overmix. Gently fold in pistachios and blackberries.
- Pour the batter into the prepared pan and bake for 30-35 minutes until golden brown and a toothpick inserted comes out clean.
- Allow cooling for ten minutes in the pan before transferring to a wire rack to cool completely.
