Ingredients

  • 2 ½ cups (300 g) all-purpose flour
  • 2 tsp sugar
  • 1 tsp salt
  • 2 tsp instant yeast
  • ¾ cup (180 ml) warm water
  • 2 tbsp olive oil
  • 200 g cream cheese (softened)
  • ½ cup powdered sugar
  • ½ cup heavy cream (whipped)
  • 2 tbsp strawberry purée or raspberry purée
  • Fresh figs (halved)
  • Fresh strawberries (whole or halved)
  • Fresh blueberries
  • Shredded coconut
  • Powdered sugar (for dusting)
  • Fresh rosemary sprigs (for garnish)
  • ½ cup vanilla yogurt or mascarpone cream (optional dip)
  • 1 tsp honey or vanilla extract (optional dip)

Instructions

  1. In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and olive oil. Knead into a soft dough (8–10 minutes).
  3. Cover and let rise for 1 hour, until doubled in size.
  4. Preheat oven to 220°C (425°F).
  5. Roll out dough into a round pizza shape. Place on a lined tray.
  6. Bake for 8–10 minutes until lightly golden. Let cool completely.
  7. Beat cream cheese and powdered sugar until smooth.
  8. Fold in whipped cream and strawberry/raspberry purée to tint it pink.
  9. Spread the pink cream evenly over the cooled crust.
  10. Arrange figs, strawberries, and blueberries on top.
  11. Sprinkle with shredded coconut and dust with powdered sugar.
  12. Place a small bowl of vanilla yogurt/mascarpone dip in the center.
  13. Garnish with rosemary sprigs for a fresh, elegant look.
