- 1 tsp salt
- 2 tsp instant yeast
- ¾ cup (180 ml) warm water
- 2 tbsp olive oil
- 200 g cream cheese (softened)
- ½ cup powdered sugar
- ½ cup heavy cream (whipped)
- 2 tbsp strawberry purée or raspberry purée
- Fresh figs (halved)
- Fresh strawberries (whole or halved)
- Fresh blueberries
- Shredded coconut
- Powdered sugar (for dusting)
- Fresh rosemary sprigs (for garnish)
- ½ cup vanilla yogurt or mascarpone cream (optional dip)
- 1 tsp honey or vanilla extract (optional dip)
Instructions
- In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Add flour, salt, and olive oil. Knead into a soft dough (8–10 minutes).
- Cover and let rise for 1 hour, until doubled in size.
- Preheat oven to 220°C (425°F).
- Roll out dough into a round pizza shape. Place on a lined tray.
- Bake for 8–10 minutes until lightly golden. Let cool completely.
- Beat cream cheese and powdered sugar until smooth.
- Fold in whipped cream and strawberry/raspberry purée to tint it pink.
- Spread the pink cream evenly over the cooled crust.
- Arrange figs, strawberries, and blueberries on top.
- Sprinkle with shredded coconut and dust with powdered sugar.
- Place a small bowl of vanilla yogurt/mascarpone dip in the center.
- Garnish with rosemary sprigs for a fresh, elegant look.
