- 1 cup fresh pineapple chunks (plus extra for garnish)
- 2 tbsp honey or maple syrup (adjust to taste)
- 1 tbsp fresh lime juice
- 1 tsp lime zest
- 1–2 tbsp fresh mint leaves (finely chopped)
- Pinch of chili flakes (optional, for a subtle kick)
- Fresh mint sprigs (for garnish)
Instructions
- Dice fresh pineapple into small bite-sized pieces.
- If you prefer extra sweetness, drizzle a little honey over the pineapple chunks and toss.
- In a mixing bowl, combine Greek yogurt, honey, lime juice, and lime zest.
- Whisk until smooth and creamy.
- Fold in pineapple chunks and chopped mint leaves.
- Taste and adjust sweetness by adding more honey if needed.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, sprinkle with chili flakes (if using), garnish with extra pineapple chunks, and top with fresh mint sprigs.
- Enjoy as a dip with graham crackers, pita chips, or fresh fruit slices. Can also be served as a light dessert on its own.
