Refreshing pineapple mint popsicles perfect for hot days.
Ingredients

- 2 cups fresh pineapple chunks (ripe for best flavor)
- a handful fresh mint leaves (preferably with tender stems)
- 1 lime lime juice (freshly squeezed)
- 2–3 tablespoons sugar (adjust to taste)
- 0 cup water or coconut water (to thin the mixture if needed)
Instructions
- Place the fresh pineapple chunks into the blender and blend until smooth, about 30 seconds, until the mixture is bright yellow and slightly frothy.
- Add a handful of fresh mint leaves, freshly squeezed lime juice, and 2 tablespoons of sugar to the blender.
- Pulse the blender briefly to mix everything together, just until the mint is incorporated but not over-blended—this preserves some of its delicate aroma.
- Taste the mixture and add more sugar if desired, blending again briefly to combine.
- If the mixture seems too thick, add a splash of water or coconut water and blend gently until smooth and pourable.
- Pour the pineapple mint mixture into popsicle molds, leaving about a quarter inch at the top to allow for expansion.
- Insert the sticks firmly into each mold and place them in the freezer. For the best results, freeze uncovered for 1 hour, then cover loosely with foil.
- Freeze for at least 4 hours or overnight until completely solid and firm, with a vibrant, icy appearance.
- To serve, run warm water over the outside of the molds for 10 seconds to loosen the popsicles, then gently pull them out.
- For the perfect finishing touch, let the popsicles sit at room temperature for 2 minutes before enjoying their bright, refreshing flavor.
