Ingredients
Scale
- 2 cups graham cracker crumbs (or digestive biscuits)
- ½ cup (115 g) unsalted butter, melted
- ¼ cup (50 g) sugar
- 16 oz (450 g) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 1 tsp vanilla extract
- 2 cups heavy whipping cream, whipped to stiff peaks
- 4–5 fresh peaches (peeled and sliced) or 2 cans (15 oz each) sliced peaches, well-drained
- 2 tbsp peach preserves or apricot jam (optional, for glaze)
- Additional whipped cream
- Fresh mint leaves
- Extra peach slices for garnish
Instructions
- Make the Crust: Mix graham crumbs, melted butter, and sugar. Press firmly into a 9×13-inch dish (or springform pan for tall layers). Chill 15 minutes to set.
- Prepare the Cream Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream until light and fluffy.
- Assemble the Layers: Spread half the cream mixture over the chilled crust. Add a layer of sliced peaches. Repeat with remaining cream and peaches for a tall layered effect.
- Garnish & Chill: Spread whipped cream on top and decorate with peach slices and mint. Optional: Brush peaches with warmed preserves for shine. Chill at least 4 hours (or overnight) for best texture.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Can substitute fresh peaches with canned peaches if out of season.
- For added flavor, consider adding a splash of almond extract to the cream filling.
