Delicious Peach Mascarpone Cream Cupcakes topped with fresh peaches and caramel sauce.

- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup whole milk
- ½ cup diced fresh peaches (peeled)
- 8 oz mascarpone cheese (chilled)
- 1 cup heavy whipping cream (cold)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Fresh peach slices (diced or thin wedges)
- Caramel sauce (for drizzling)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time, then mix in vanilla.
- Alternate adding dry ingredients and milk, mixing just until combined.
- Gently fold in diced peaches.
- Divide batter into liners (about ¾ full) and bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely.
- In a chilled bowl, beat mascarpone cheese until smooth.
- Slowly add heavy cream and whip until soft peaks form.
- Add powdered sugar and vanilla, and whip until stiff peaks form (don’t overbeat).
- Pipe mascarpone cream frosting generously on cooled cupcakes.
- Top with diced or sliced peaches.
- Drizzle with caramel sauce for a finishing touch.

- Ensure the mascarpone cheese is chilled for best results.
- Do not overbeat the cream to avoid a grainy texture.
- Fresh peaches can be substituted with canned peaches if necessary.
