Description
Layers of funfetti whipped cream, colorful sprinkles, and Oreo cookies come together in this no-bake icebox cake. It’s creamy, crunchy, and festive—perfect for birthdays, parties, or whenever you want a simple sweet treat!
Ingredients
Scale
- 2 packages Oreo cookies (regular or Golden, about 48 cookies)
- 4 cups heavy whipping cream, cold
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 1 ½ cups rainbow sprinkles (divided)
- Optional: 8 oz cream cheese, softened (for thicker filling)
Instructions
- Make the Whipped Cream: Beat heavy cream, powdered sugar, and vanilla in a large mixing bowl until stiff peaks form. Fold in 1 cup of rainbow sprinkles. (Optional: for a richer cheesecake-like texture, beat in softened cream cheese before folding in sprinkles.)
- Assemble the Cake: Line a 9×13-inch dish (or springform pan) with a thin layer of whipped cream. Add a layer of Oreo cookies on top. Spread more whipped cream over the cookies. Repeat layers until all ingredients are used, finishing with whipped cream.
- Chill: Cover and refrigerate for at least 6 hours (or overnight) until the cookies soften into cake-like layers.
- Decorate & Serve: Pipe extra whipped cream swirls on top. Sprinkle with more rainbow sprinkles. Slice and enjoy your colorful no-bake dessert!
Notes
- For a richer flavor, consider adding softened cream cheese to the whipped cream.
- Make sure to refrigerate the cake for the recommended time to achieve the best texture.
