This silky, no-bake pie is pure comfort — a buttery graham-style crust filled with a light vanilla or coconut custard and topped with clouds of whipped cream and golden crumbs. It’s quick, elegant, and melts in your mouth.

  • 2 cups (200 g) graham cracker or digestive biscuit crumbs
  • ½ cup (115 g) melted butter
  • 2 tbsp granulated sugar
  • For the Creamy Filling
  • 2 cups (480 ml) whole milk
  • ½ cup (100 g) granulated sugar
  • 3 tbsp cornstarch
  • ¼ tsp salt
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • (Optional for German-chocolate twist: add ½ cup shredded coconut + ¼ cup chopped pecans at the end.)
  • For the Topping
  • 1 cup (240 ml) heavy cream, cold
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Crumbled cookie or crust crumbs for garnish

Instructions

  1. Make the Crust: Combine crumbs, sugar, and melted butter until evenly moistened. Press mixture firmly into a 9-inch (23 cm) pie dish, covering the bottom and sides. Chill in the fridge for 20 minutes while you make the filling.
  2. Prepare the Filling: In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add milk, whisking until smooth. Cook over medium heat, stirring constantly, until mixture thickens (about 7–8 minutes). In a separate bowl, whisk egg yolks; slowly pour in a bit of the hot mixture to temper. Return the tempered eggs to the saucepan and cook 2 more minutes, stirring. Remove from heat; stir in butter and vanilla until glossy. (Optional: Fold in coconut and pecans for the German-chocolate version.) Pour filling into the chilled crust and smooth the top. Cover with plastic wrap (touching the surface) and chill at least 4 hours or overnight.
  3. Whip and Decorate: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread or pipe whipped cream on the chilled pie. Sprinkle with crumbs or toasted nuts for garnish.
