- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 8 oz cream cheese, softened
- ¼ cup granulated sugar

Instructions
- Prepare the Cheesecake Filling: In a bowl, beat cream cheese, sugar, and vanilla until smooth. Cover and freeze for 30–45 minutes, until firm enough to scoop.
- Make the Cookie Dough: In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Add flour, baking powder, and salt. Mix until dough forms. Chill dough for 30 minutes for easier handling.
- Assemble Cookies: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop cookie dough into balls, flatten slightly. Place a teaspoon of chilled cheesecake filling in the center, fold dough around it, and roll into a ball. Flatten gently on the baking sheet (you can leave a small opening on top for the cheesecake to peek through, as in the photo).
- Bake: Bake for 10–12 minutes, until edges are golden but centers are still soft. Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
- Serve: Enjoy slightly warm for a gooey cheesecake center or chilled for a firmer bite.
