Description

A delightful layered treat combining chocolate, vanilla, and strawberry mousse on a rich brownie base.


Ingredients

  • ½ cup (115 g) unsalted butter, melted
  • ¾ cup (150 g) sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup (65 g) flour
  • ⅓ cup (30 g) unsweetened cocoa powder
  • Pinch of salt
  • ¾ cup (175 ml) heavy cream (for chocolate mousse)
  • 100 g (3.5 oz) dark chocolate, chopped
  • 1 tsp gelatin powder + 2 Tbsp cold water (for chocolate mousse)
  • ¾ cup (175 ml) heavy cream (for vanilla mousse)
  • 100 g (3.5 oz) white chocolate, chopped
  • 1 tsp vanilla extract (for vanilla mousse)
  • 1 tsp gelatin powder + 2 Tbsp cold water (for vanilla mousse)
  • ¾ cup (175 ml) heavy cream (for strawberry mousse)
  • ¾ cup (120 g) fresh strawberries, puréed and strained
  • 2 Tbsp sugar (for strawberry mousse)
  • 1 tsp gelatin powder + 2 Tbsp cold water (for strawberry mousse)
  • A few drops of pink or red food coloring (optional)
  • Whipped cream (for decoration)
  • Chocolate and strawberry swirls (for decoration)
  • Sprinkles or chocolate curls (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Mix butter, sugar, and vanilla until smooth. Add eggs, beating until combined. Sift in flour, cocoa powder, and salt. Pour into a greased and parchment-lined 8-inch pan. Bake for 18–20 minutes, then cool completely.
  2. Bloom gelatin in cold water for 5 minutes. Heat cream in a saucepan until hot but not boiling. Pour over chopped chocolate, stir until melted. Add melted gelatin, whisk until smooth. Let cool slightly, then fold in whipped cream (soft peaks). Spread over brownie base. Chill 30 minutes.
  3. Bloom gelatin again in cold water. Heat cream, melt white chocolate and gelatin into it. Add vanilla, let cool. Fold in whipped cream, spread over the chocolate layer. Chill 30 minutes.
  4. Bloom gelatin in water. Heat strawberry purée with sugar until warm. Stir in gelatin until dissolved. Let cool, then fold in whipped cream (add coloring if desired). Spread over the vanilla layer. Chill at least 4 hours (or overnight) to set fully.
  5. Pipe whipped cream rosettes on top. Add chocolate swirls, strawberry decorations, or sprinkles. Slice cleanly with a warm knife for perfect layers.
