- 2 cups (200 g) graham cracker crumbs
- ½ cup (115 g) melted unsalted butter
- 2 tbsp sugar
- 8 oz (225 g) cream cheese, softened
- 1 can (14 oz / 400 g) sweetened condensed milk
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 cup (240 ml) heavy cream or whipped topping (Cool Whip)
- 1 can (8 oz / 225 g) crushed pineapple, drained
- 1 cup (150 g) maraschino cherries, halved and drained
- ½ cup (60 g) sweetened shredded coconut
- ½ cup (60 g) chopped pecans or walnuts (optional)
Instructions
- Make the Crust: Combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch (23 cm) pie dish. Chill for at least 20 minutes to set.
- Prepare the Cream Base: In a mixing bowl, beat cream cheese until smooth and creamy. Add condensed milk, vanilla, and lemon juice. Mix until silky. Fold in whipped cream until light and airy.
- Add the Fruit Mixture: Gently fold in drained pineapple, cherries, coconut, and nuts. Pour mixture into the chilled crust, spreading evenly. Cover and refrigerate for at least 4 hours (or overnight) to firm up.
- Decorate & Serve: Before serving, top with whipped cream swirls. Add a cherry on each swirl and sprinkle with toasted coconut. Slice and serve chilled — every bite is creamy, fruity, and tropical perfection!
