Description

A comforting shepherd’s pie made with ground beef and topped with creamy mashed potatoes.

Ingredients

Scale
  • 1 pound potatoes (Russet or Yukon Gold, peeled and cut into about 1-inch chunks)
  • 1 pound lean ground beef
  • ½ cup onion (chopped, about half of a medium onion)
  • 1 clove garlic (crushed or minced)
  • to taste salt and pepper
  • 6 ounces can of tomato paste (about 3/4 cup)
  • ¼ cup Worcestershire sauce
  • 1 ½ cups beef broth
  • 4 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese (divided)
  • ¼ cup plain Greek yogurt (or sour cream)
  • ¼ cup milk
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F and have eight 6 oz. ramekins ready.
  2. Place the potatoes in a pot of cold water, cover, and bring to boil. Remove cover and boil for 10-12 minutes, until fork tender.
  3. While the potatoes are cooking, heat a skillet over medium heat. Add the ground beef, onion, garlic, and a pinch of salt and pepper. Cook, breaking up the meat, until browned. Drain any excess grease.
  4. Stir in the tomato paste, Worcestershire sauce, and beef broth. Add the frozen mixed vegetables, bring to a simmer, and cook for 10-15 minutes or until thickened slightly. Season with salt and pepper to taste.
  5. Drain the potatoes and return to the pot, allowing the steam to evaporate for a couple of minutes.
  6. Add the cheddar cheese, Greek yogurt, milk, and kosher salt to the potatoes. Mash to the desired consistency.
  7. Divide the meat mixture between the ramekins, top with the mashed potatoes and remaining cheese, and place ramekins on a baking sheet.
  8. Bake for 25-30 minutes, or until heated through, and cheese and potatoes are slightly browned.

Notes

  • For a creamier texture, add more milk to the mashed potatoes.
  • This dish can be made in a larger casserole dish instead of ramekins.
  • Feel free to mix in other vegetables like corn or peas.
