  • 1 ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar

  • 2 tbsp sour cream (optional, for extra moisture)
  • 1 cup unsalted butter, softened (for frosting)
  • 3 ½ cups powdered sugar
  • 12 tbsp heavy cream or milk
  • 1 ½ tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Green gel food coloring (for half the batch)
  • Fresh raspberries (for decoration)
  • Edible gold & silver pearls (for decoration)
  • Mini meringues or sugar balls (white, for decoration)
  • Holiday sprinkles (for decoration)
  • Powdered sugar for dusting
  • Fondant Christmas trees (optional)
  • Mini candy canes (optional)
  • White chocolate shavings (optional)

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Grease a mini cheesecake pan, mini cake molds, or a muffin tin (without liners).
  3. In a bowl, whisk flour, baking powder, and salt.
  4. In another bowl, beat softened butter and sugar until creamy and pale (2–3 min).
  5. Add eggs one at a time, then vanilla.
  6. Mix in half the dry mixture.
  7. Add milk and sour cream.
  8. Mix in the remaining dry mixture until smooth.
  9. Fill each mold about 2/3 full.
  10. Bake for 14–18 minutes, until lightly golden and a toothpick comes out clean.
  11. Cool completely before topping.
  12. Beat butter for frosting until fluffy (2 min).
  13. Gradually add powdered sugar.
  14. Add vanilla, salt, and cream to adjust consistency.
  15. Divide frosting into two bowls: leave one white and tint the other Christmas green.
  16. Fit each color into its own piping bag.
  17. Pipe tall swirls using a large star tip.
  18. For green swirls, top with fresh raspberries, white mini meringues, and gold & silver pearls.
  19. For white swirls, add golden sprinkles, snowflakes, and optional mini fondant Christmas tree.
  20. Finish all with a gentle dusting of powdered sugar for a snowy effect.
