Instructions
- Preheat oven to 175°C (350°F).
- Grease a mini cheesecake pan, mini cake molds, or a muffin tin (without liners).
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat softened butter and sugar until creamy and pale (2–3 min).
- Add eggs one at a time, then vanilla.
- Mix in half the dry mixture.
- Add milk and sour cream.
- Mix in the remaining dry mixture until smooth.
- Fill each mold about 2/3 full.
- Bake for 14–18 minutes, until lightly golden and a toothpick comes out clean.
- Cool completely before topping.
- Beat butter for frosting until fluffy (2 min).
- Gradually add powdered sugar.
- Add vanilla, salt, and cream to adjust consistency.
- Divide frosting into two bowls: leave one white and tint the other Christmas green.
- Fit each color into its own piping bag.
- Pipe tall swirls using a large star tip.
- For green swirls, top with fresh raspberries, white mini meringues, and gold & silver pearls.
- For white swirls, add golden sprinkles, snowflakes, and optional mini fondant Christmas tree.
- Finish all with a gentle dusting of powdered sugar for a snowy effect.
