Description
A moist, fluffy banana bread base baked in mini molds and topped with endless combinations — chocolate chips, berries, nuts, sprinkles, caramel, Nutella, and more! Perfect for brunch, gifting, meal prep, or dessert platters.

- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 3 medium ripe bananas, mashed
- ½ cup sour cream OR yogurt
Instructions
- Preheat oven to 175°C (350°F). Grease a 6-mini-loaf pan or use silicone molds.
- In a bowl, whisk flour + baking soda + baking powder + salt + cinnamon.
- In another bowl, mix melted butter + sugar. Add eggs + vanilla and mix well.
- Add mashed bananas + sour cream (or yogurt). Fold in dry ingredients just until combined — do not overmix.
- Divide the batter evenly among the 6 molds. Each loaf should be filled about ¾ full.
- Add the toppings of your choice.
- Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Let cool for 10 minutes before removing from molds.

- You can create 6 different mini loaves from one batter!
