Description

A moist, fluffy banana bread base baked in mini molds and topped with endless combinations — chocolate chips, berries, nuts, sprinkles, caramel, Nutella, and more! Perfect for brunch, gifting, meal prep, or dessert platters.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 medium ripe bananas, mashed
  • ½ cup sour cream OR yogurt

Instructions

  1. Preheat oven to 175°C (350°F). Grease a 6-mini-loaf pan or use silicone molds.
  2. In a bowl, whisk flour + baking soda + baking powder + salt + cinnamon.
  3. In another bowl, mix melted butter + sugar. Add eggs + vanilla and mix well.
  4. Add mashed bananas + sour cream (or yogurt). Fold in dry ingredients just until combined — do not overmix.
  5. Divide the batter evenly among the 6 molds. Each loaf should be filled about ¾ full.
  6. Add the toppings of your choice.
  7. Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Let cool for 10 minutes before removing from molds.

  • You can create 6 different mini loaves from one batter!
