Description

This rich chocolate cake is perfect for any celebration!


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking soda
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Whisk together until well combined.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients into the dry ingredients. Stir until just combined.
  5. Carefully stir in the boiling water. The batter will be thin, so don’t be alarmed; this is what gives the cake its moisture!
  6. If you desire an extra chocolate kick, fold in the semi-sweet chocolate chips.
  7. Divide the batter evenly between the prepared cake pans.
  8. Place the pans in the preheated oven and bake for 25-30 minutes. Insert a toothpick into the center; if it comes out clean, the cake is done.
  9. Once baked, remove the cakes from the oven and let them cool in the pans for about 20 minutes. Then, turn the cakes onto wire racks to cool completely.
  10. Frost with your favorite chocolate frosting once cooled, layering generously for that over-the-top experience.
