- ¾ cup unsweetened cocoa powder
- 1½ teaspoons baking soda
- 1½ teaspoons baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup semi-sweet chocolate chips (optional)
Instructions
- Start by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Whisk together until well combined.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients into the dry ingredients. Stir until just combined.
- Carefully stir in the boiling water. The batter will be thin, so don’t be alarmed; this is what gives the cake its moisture!
- If you desire an extra chocolate kick, fold in the semi-sweet chocolate chips.
- Divide the batter evenly between the prepared cake pans.
- Place the pans in the preheated oven and bake for 25-30 minutes. Insert a toothpick into the center; if it comes out clean, the cake is done.
- Once baked, remove the cakes from the oven and let them cool in the pans for about 20 minutes. Then, turn the cakes onto wire racks to cool completely.
- Frost with your favorite chocolate frosting once cooled, layering generously for that over-the-top experience.
