- ½ cup (115 g) melted butter
- 2 tbsp brown sugar (optional, for extra caramel flavor)
- 16 oz (450 g) cream cheese, softened
- 1¼ cups (300 ml) heavy cream, cold
- ¾ cup (90 g) powdered sugar
- ¼ cup (60 ml) Baileys Irish Cream (or milk for a non-alcoholic version)
- 1 tsp vanilla extract
- 1 cup (100 g) Maltesers, crushed or halved
- ½ cup (90 g) Maltesers (whole or halved) for topping
- ½ cup (120 ml) chocolate ganache or melted milk chocolate for topping
- Maraschino cherries (optional but stunning!)
- Crumble biscuits for garnish
Instructions
- In a bowl, combine biscuit crumbs, melted butter, and sugar until evenly moistened. Press mixture firmly into the base of a 9-inch (23 cm) springform pan. Chill in the refrigerator for 20–30 minutes while preparing the filling.
- In a large mixing bowl, beat cream cheese until smooth and creamy. Add powdered sugar, vanilla, and Baileys, and mix until combined. In a separate bowl, whip heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until light and airy. Stir in the crushed Maltesers evenly.
- Pour the cheesecake filling over the chilled crust. Smooth the top with a spatula. Chill in the refrigerator for at least 6 hours or overnight for best results.
- Once set, drizzle the top with melted chocolate or ganache. Arrange whole Maltesers and cherries on top. Sprinkle crushed biscuits for a touch of crunch. Chill for another 15–20 minutes before serving to let the topping set.
