- 2 cups Kodiak Cakes Power Cakes mix
- 1 cup canned pumpkin puree
- 2 large eggs
- 1/2 cup maple syrup
- 1/3 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease.
- In a large bowl, whisk together the Kodiak Cakes mix, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, mix the pumpkin puree, eggs, maple syrup, almond milk, melted coconut oil, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just mixed. Do not overmix.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
Notes
- These muffins are great for meal prep and can be stored in an airtight container for up to a week.
- Feel free to add chocolate chips or nuts for extra flavor and texture!
