Description

This delicious slow cooker peri peri chicken is flavorful and tender, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup peri peri sauce
  • 1 medium onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon

Instructions

  1. Rinse chicken under cold water and pat dry with paper towels.
  2. In a bowl, mix peri peri sauce, minced garlic, olive oil, lemon juice, salt, and pepper. Coat chicken breasts thoroughly in the marinade.
  3. Place sliced onions at the bottom of the slow cooker for added flavor and elevation.
  4. Lay marinated chicken on top of the onions. Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  5. Once cooked, let chicken rest briefly before serving. Drizzle with some sauce from the slow cooker.

Notes

  • This recipe works well with other cuts of chicken as well, such as thighs.
  • For a spicier version, increase the amount of peri peri sauce to taste.
