Description
This delicious slow cooker peri peri chicken is flavorful and tender, perfect for a quick weeknight dinner.
Ingredients

- 4 boneless, skinless chicken breasts (about 1 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup peri peri sauce
- 1 medium onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
Instructions
- Rinse chicken under cold water and pat dry with paper towels.
- In a bowl, mix peri peri sauce, minced garlic, olive oil, lemon juice, salt, and pepper. Coat chicken breasts thoroughly in the marinade.
- Place sliced onions at the bottom of the slow cooker for added flavor and elevation.
- Lay marinated chicken on top of the onions. Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
- Once cooked, let chicken rest briefly before serving. Drizzle with some sauce from the slow cooker.
Notes
- This recipe works well with other cuts of chicken as well, such as thighs.
- For a spicier version, increase the amount of peri peri sauce to taste.
