Ingredients

- 8 oz pasta (fettuccine, penne, or spaghetti)
- 2 cups fresh spinach
- 1 cup sliced mushrooms (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté mushrooms until golden brown (about 5 minutes). Add minced garlic and cook for an additional minute.
- Stir in fresh spinach and cook until wilted.
- Pour in heavy cream, stirring constantly; gradually add Parmesan cheese until melted and creamy.
- Toss the cooked pasta with the sauce until well-coated. Season with salt and pepper to taste.
- Serve warm, garnished with extra Parmesan if desired.
