Description

Ingredients

  • 2 cups fresh spinach
  • 1 cup sliced mushrooms (button or cremini)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté mushrooms until golden brown (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in fresh spinach and cook until wilted.
  4. Pour in heavy cream, stirring constantly; gradually add Parmesan cheese until melted and creamy.
  5. Toss the cooked pasta with the sauce until well-coated. Season with salt and pepper to taste.
  6. Serve warm, garnished with extra Parmesan if desired.
