Ingredients

  • 2 cups fresh cremini and shiitake mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp sweet paprika
  • 4 cups vegetable broth
  • 1 cup sour cream (full-fat preferred)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  2. Add minced garlic and sliced mushrooms; cook until mushrooms shrink and release moisture.
  3. Stir in sweet paprika for flavor infusion.
  4. Pour in vegetable broth, bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat and stir in sour cream until smooth. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley if desired.
