Ingredients

  • ½ cup milk (or non-dairy alternative)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add eggs, melted coconut oil, sugar, and vanilla extract to the mashed bananas; whisk until combined.
  4. In another bowl, mix the gluten-free flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined; lumps are okay!
  6. Pour batter into the prepared pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
