- 3 ripe bananas, mashed
- 1 ½ cups gluten-free flour blend
- ¾ cup granulated sugar (or coconut sugar)
- 1 tsp baking powder
- 2 large eggs
- ½ cup coconut oil, melted (or butter)
- 1 tsp vanilla extract
- ½ cup milk (or non-dairy alternative)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the bananas until smooth.
- Add eggs, melted coconut oil, sugar, and vanilla extract to the mashed bananas; whisk until combined.
- In another bowl, mix the gluten-free flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined; lumps are okay!
- Pour batter into the prepared pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
Notes
- Make sure the bananas are very ripe for the best sweetness and flavor.
- This bread can be stored in an airtight container for several days.
