- 2 cups old-fashioned rolled oats
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 cup milk (or almond milk)
- 2 large eggs (or flax eggs for vegan)
- 1 tsp vanilla extract
- 1/4 cup melted butter (or coconut oil)
- 1/2 cup nuts or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, mix rolled oats, brown sugar, baking powder, and cinnamon until combined.
- In another bowl, whisk together milk, eggs, melted butter or coconut oil, and vanilla extract. Pour over dry ingredients and stir until just combined.
- If desired, fold in nuts or raisins for added texture.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25-30 minutes until golden brown on top. Let cool slightly before cutting into squares.
