Description
This refreshing salad combines cabbage, carrots, and bell peppers with a creamy peanut butter dressing.
Ingredients

- 4 cups green cabbage, shredded (about half a head)
- 1 cup carrots, grated
- 1 red bell pepper, thinly sliced
- 4 green onions, chopped (white and green parts)
- 1/2 cup natural peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp fresh lime juice
- 2 tbsp honey or maple syrup
- 1 tsp sesame oil
- Cilantro (optional), for garnish
Instructions
- Shred the cabbage into thin strips using a sharp knife or mandoline.
- Grate the carrots and slice the red bell pepper.
- In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, and sesame oil until smooth.
- In a large mixing bowl, combine cabbage, carrots, bell pepper slices, and green onions.
- Drizzle dressing over the veggies and toss gently until evenly coated.
- Cover and refrigerate for at least 30 minutes for optimal flavor infusion before serving.
Notes
- For a spicier kick, add some chopped chili peppers to the salad.
- This salad can be made a few hours in advance; simply toss before serving to recoat the vegetables.
