Description

This delicious glazed salmon recipe is paired with rice noodles and fresh vegetables, making it a perfect meal for any occasion.


Ingredients

  • 1 ¼ pounds salmon fillets
  • 2 tablespoons sesame oil
  • 3 tablespoons honey
  • 4 tablespoons soy sauce
  • 4 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • ¼ teaspoon ground ginger
  • 8 ounces thin rice noodles
  • 2 cups broccoli florets
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

  1. In a bowl, whisk together sesame oil, honey, soy sauce, rice vinegar, garlic, and ginger.
  2. Place salmon in a shallow dish and pour the mixture over it. Refrigerate for 1 hour.
  3. Preheat oven to 350°F. Bake salmon in its marinade for 15 minutes.
  4. Pour remaining marinade into a saucepan. Remove the skin and set salmon aside.
  5. Switch oven to broil and broil salmon for 4–6 minutes until glazed.
  6. Warm the reserved marinade over medium heat and simmer for 2–4 minutes.
  7. Cook rice noodles according to package directions.
  8. Arrange broccoli and asparagus on a baking sheet with olive oil, salt, and pepper. Roast for 12–15 minutes.
  9. Divide noodles among plates, add vegetables, top with salmon, and spoon sauce over.

Notes

  • For best flavor, let the salmon marinate longer than 1 hour.
