A fun and vibrant ice cream recipe that combines creamy vanilla ice cream with a gooey Gushers candy core, creating a delightful candy explosion in every scoop.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup Gushers candy (choose mixed flavors)
  • 2 tbsp corn syrup
  • 2 tbsp water
  • ¼ cup strawberry syrup (for red lava effect)
  • ¼ cup lime or neon green syrup (for contrast lava effect)

Instructions

  1. In a bowl, whisk heavy cream, milk, sugar, vanilla, and salt until sugar dissolves.
  2. Chill mixture in the fridge for at least 2 hours.
  3. In a saucepan, combine Gushers, corn syrup, and water. Heat gently until the Gushers melt into a thick, gooey syrup. Cool slightly.
  4. Pour chilled ice cream base into an ice cream maker and churn until soft-serve consistency (20–25 minutes).
  5. Transfer half of the churned ice cream into a container. Drizzle melted Gushers syrup in the middle. Swirl lightly with a knife.
  6. Add the remaining ice cream and repeat with more syrup for gooey candy pockets.
  7. Freeze for 4–6 hours until firm.
  8. Scoop into bowls and drizzle with strawberry and lime syrups for a bold explosion effect.
