A fun and vibrant ice cream recipe that combines creamy vanilla ice cream with a gooey Gushers candy core, creating a delightful candy explosion in every scoop.

- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup Gushers candy (choose mixed flavors)
- 2 tbsp corn syrup
- 2 tbsp water
- ¼ cup strawberry syrup (for red lava effect)
- ¼ cup lime or neon green syrup (for contrast lava effect)
Instructions
- In a bowl, whisk heavy cream, milk, sugar, vanilla, and salt until sugar dissolves.
- Chill mixture in the fridge for at least 2 hours.
- In a saucepan, combine Gushers, corn syrup, and water. Heat gently until the Gushers melt into a thick, gooey syrup. Cool slightly.
- Pour chilled ice cream base into an ice cream maker and churn until soft-serve consistency (20–25 minutes).
- Transfer half of the churned ice cream into a container. Drizzle melted Gushers syrup in the middle. Swirl lightly with a knife.
- Add the remaining ice cream and repeat with more syrup for gooey candy pockets.
- Freeze for 4–6 hours until firm.
- Scoop into bowls and drizzle with strawberry and lime syrups for a bold explosion effect.
