- 1 ½ cups white chocolate chips or candy melts
- ½ cup heavy cream
- 1 tsp cotton candy flavoring (or vanilla if unavailable)
- Pink/blue food coloring (optional for swirl effect)
- Rainbow gummy drops (gumdrops or jelly candies)
- Powdered sugar (for dusting)
Instructions
- Mix graham cracker crumbs, melted butter, and sugar.
- Press firmly into the bottom of a lined 8×8-inch pan. Refrigerate while preparing filling.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped cream until fluffy.
- Spread evenly over the chilled crust. Refrigerate 30 minutes.
- In a saucepan, heat heavy cream until just simmering.
- Pour over white chocolate chips and stir until smooth.
- Add cotton candy flavoring and optional food coloring.
- Spread over the cheesecake layer and let set slightly.
- Press rainbow gummy candies on top before the topping fully sets.
- Lightly dust with powdered sugar for a frosted effect.
- Refrigerate for at least 2–3 hours or until firm.
