Description

Ingredients

  • 2 tbsp sugar
  • 16 oz (450 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (whipped to stiff peaks)
  • 1 ½ cups white chocolate chips or candy melts
  • ½ cup heavy cream
  • 1 tsp cotton candy flavoring (or vanilla if unavailable)
  • Pink/blue food coloring (optional for swirl effect)
  • Rainbow gummy drops (gumdrops or jelly candies)
  • Powdered sugar (for dusting)

Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar.
  2. Press firmly into the bottom of a lined 8×8-inch pan. Refrigerate while preparing filling.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Fold in whipped cream until fluffy.
  5. Spread evenly over the chilled crust. Refrigerate 30 minutes.
  6. In a saucepan, heat heavy cream until just simmering.
  7. Pour over white chocolate chips and stir until smooth.
  8. Add cotton candy flavoring and optional food coloring.
  9. Spread over the cheesecake layer and let set slightly.
  10. Press rainbow gummy candies on top before the topping fully sets.
  11. Lightly dust with powdered sugar for a frosted effect.
  12. Refrigerate for at least 2–3 hours or until firm.
