- 1 lb Ground Beef
- 2 medium Sweet Potatoes
- 2 tbsp Olive Oil
- 1 tbsp Taco Seasoning
- 1 medium Onion
- 1 medium Avocado
- 1 cup Cottage Cheese
- 3 tbsp Hot Honey
- 2 tbsp Chopped Cilantro
- 1 tsp Red Pepper Flakes
- 2 wedges Lime
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes in a bowl with olive oil, and seasonings. Spread on a sheet and roast for 40-45 minutes.
- Sauté diced onion in a skillet with olive oil over medium heat until softened, about 5 minutes.
- Add ground beef to the skillet with taco seasoning. Cook until browned, about 7-10 minutes.
- Layer bowls starting with roasted sweet potatoes, ground beef, avocado, and cottage cheese.
- Drizzle with hot honey and garnish with cilantro, red pepper flakes, or lime as desired.
Notes
- Choose lean ground beef (around 93%) for best results.
- Ensure avocado is ripe for maximum flavor.
- Cottage cheese can be substituted with dairy-free yogurt.
