Grinchy Mint Chocolate Cake Bites are festive, minty, and moist no-bake treats perfect for the holiday season.

- 1 box white cake mix (or homemade vanilla cake)
- 1 cup water
- ⅓ cup vegetable oil
- 3 large eggs
- 1–2 tsp peppermint extract
- Green gel food coloring
- ½ cup vanilla frosting (or cream cheese frosting)
- ½ cup mini chocolate chips (optional)
- 12 oz (340 g) green candy melts or white chocolate + green coloring
- 1 tsp peppermint extract (optional)
- 1 tbsp coconut oil (for smooth dipping)
- 6 oz dark or milk chocolate (for drizzling)
- Holiday sprinkles (red, white, green)
- Candy hearts or heart-shaped sprinkles
Instructions
- Preheat oven to 350°F / 175°C. Prepare cake mix according to the package, adding peppermint extract and green gel coloring. Bake in a 9×13 pan for 20–25 minutes. Cool completely.
- Crumble the cooled cake into fine crumbs. Add vanilla frosting and mix until dough-like. Fold in mini chocolate chips if using. Chill 10 minutes for easier shaping.
- Scoop tablespoon-size portions and roll into smooth balls. Freeze 10–15 minutes until firm.
- Melt green candy melts with 1 tbsp coconut oil. Add a small drop of peppermint extract if desired. Dip each chilled cake ball using a fork. Place on parchment and immediately add festive sprinkles and press a candy heart on top.
- Melt dark chocolate and drizzle over the set cake bites for the striped effect.
- Allow chocolate to harden fully. Store refrigerated for 5–7 days.

- For a quicker option, use pre-made vanilla cake.
- Ensure the cake is completely cooled before crumbling.
