Description

Juicy watermelon caramelized on the grill, topped with creamy feta, fresh herbs, and a drizzle of spicy-sweet chili honey. A summer-ready appetizer that’s smoky, sweet, and tangy all at once!


Ingredients

  • 1 small seedless watermelon (cut into thick rectangles or wedges)
  • 1 tbsp olive oil (for brushing)
  • ½ cup feta cheese, crumbled
  • Fresh mint leaves (or basil), chopped
  • ¼ cup honey
  • ½ tsp chili flakes (adjust to taste)
  • ½ tsp lime juice
  • Pinch of salt

Instructions

  1. Slice watermelon into thick rectangular blocks or wedges. Pat dry with a paper towel and brush lightly with olive oil.
  2. Heat grill or grill pan to medium-high. Grill watermelon slices for 1–2 minutes per side until lightly charred but still juicy.
  3. In a small bowl, mix honey, chili flakes, lime juice, and a pinch of salt until smooth.
  4. Place grilled watermelon on a serving platter. Sprinkle with feta cheese, fresh mint, and drizzle with chili honey.
