- 1 small seedless watermelon (cut into thick rectangles or wedges)
- 1 tbsp olive oil (for brushing)
- ½ cup feta cheese, crumbled
- Fresh mint leaves (or basil), chopped
- ¼ cup honey
- ½ tsp chili flakes (adjust to taste)
- ½ tsp lime juice
- Pinch of salt
Instructions
- Slice watermelon into thick rectangular blocks or wedges. Pat dry with a paper towel and brush lightly with olive oil.
- Heat grill or grill pan to medium-high. Grill watermelon slices for 1–2 minutes per side until lightly charred but still juicy.
- In a small bowl, mix honey, chili flakes, lime juice, and a pinch of salt until smooth.
- Place grilled watermelon on a serving platter. Sprinkle with feta cheese, fresh mint, and drizzle with chili honey.
- Enjoy immediately while the watermelon is warm and juicy with the cool feta and spicy-sweet drizzle.
