Description

A refreshing and flavorful Grilled Shrimp Caprese Salad that combines succulent shrimp with fresh greens, cherry tomatoes, mozzarella, and a sweet balsamic glaze.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp chili flakes (optional, for heat)
  • Salt & black pepper, to taste
  • Juice of ½ lemon
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1 ½ cups cherry tomatoes
  • 1 cup fresh mozzarella balls (bocconcini)
  • Fresh basil leaves, torn
  • ½ cup balsamic vinegar
  • 2 tbsp honey (or brown sugar)

Instructions

  1. In a bowl, combine olive oil, garlic, paprika, chili flakes, salt, pepper, and lemon juice.
  2. Add shrimp, toss to coat, and let marinate for 15 minutes.
  3. Heat a grill pan or outdoor grill over medium-high heat.
  4. Grill shrimp for 2–3 minutes per side, until pink and lightly charred. Set aside.
  5. In a small saucepan, simmer balsamic vinegar and honey over medium heat.
  6. Stir occasionally until reduced by half and syrupy (about 8–10 minutes).
  7. Remove from heat and let cool slightly.
  8. On a large platter, arrange mixed greens.
  9. Scatter cherry tomatoes, mozzarella balls, and fresh basil.
  10. Top with grilled shrimp.
  11. Drizzle generously with balsamic glaze.

Notes

  • For extra flavor, let the shrimp marinate for longer if time allows.
