Description
A refreshing and flavorful Grilled Shrimp Caprese Salad that combines succulent shrimp with fresh greens, cherry tomatoes, mozzarella, and a sweet balsamic glaze.

- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp chili flakes (optional, for heat)
- Salt & black pepper, to taste
- Juice of ½ lemon
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1 ½ cups cherry tomatoes
- 1 cup fresh mozzarella balls (bocconcini)
- Fresh basil leaves, torn
- ½ cup balsamic vinegar
- 2 tbsp honey (or brown sugar)
Instructions
- In a bowl, combine olive oil, garlic, paprika, chili flakes, salt, pepper, and lemon juice.
- Add shrimp, toss to coat, and let marinate for 15 minutes.
- Heat a grill pan or outdoor grill over medium-high heat.
- Grill shrimp for 2–3 minutes per side, until pink and lightly charred. Set aside.
- In a small saucepan, simmer balsamic vinegar and honey over medium heat.
- Stir occasionally until reduced by half and syrupy (about 8–10 minutes).
- Remove from heat and let cool slightly.
- On a large platter, arrange mixed greens.
- Scatter cherry tomatoes, mozzarella balls, and fresh basil.
- Top with grilled shrimp.
- Drizzle generously with balsamic glaze.
Notes
- For extra flavor, let the shrimp marinate for longer if time allows.
- Feel free to add other vegetables like cucumbers or bell peppers for more crunch.
