Description

This creamy herb dressing is perfect for salads or as a dip.


Ingredients

Scale
  • 1/2 cup mayonnaise (or sour cream)
  • 1/2 cup plain Greek yogurt
  • 2 tsp garlic paste
  • 2 green onions
  • 2 tbsp fresh dill
  • 2 tbsp fresh chives
  • 1/4 cup fresh parsley leaves (loosely packed)
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 cup spinach
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp lemon juice (1 lemon)
  • 2 tbsp olive oil
  • 1/2 avocado (optional)

Instructions

  1. Blend creamy ingredients with aromatics and herbs. In a food processor, add mayo, yogurt, garlic, green onions, dill, chives, and parsley. Blend until smooth.
  2. Add vegetables and seasonings. Next, add in honey, Dijon mustard, spinach, salt, pepper, and lemon juice. Add avocado if using. Blend again until smooth, scraping down the sides if needed.
  3. Add oil. With the lid on, using the opening in the top, blend dressing while slowly pouring in olive oil. Blend until smooth.
  4. Season. Taste and add more salt as needed.
  5. Store dressing. Use a funnel to pour dressing into a jar. Chill in the fridge until ready to serve.

Notes

  • For a spicier kick, consider adding a pinch of cayenne pepper.
  • This dressing can be stored in the refrigerator for up to a week.
