Golden Vanilla Cream Puffs are light and airy pastries filled with a rich vanilla cream, perfect for any occasion.

- ½ cup (120 ml) water
- ½ cup (120 ml) milk
- ½ cup (115 g) unsalted butter
- 1 tbsp sugar
- ¼ tsp salt
- 1 cup (120 g) all-purpose flour
- 4 large eggs (room temperature)
- 2 cups (500 ml) whole milk (for filling)
- 4 egg yolks (for filling)
- ½ cup (100 g) sugar (for filling)
- 3 tbsp cornstarch (for filling)
- 2 tsp vanilla extract (or vanilla bean paste, for filling)
- 2 tbsp unsalted butter (for filling)
- ½ cup (120 ml) heavy cream (whipped, for filling)
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment.
- In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
- Remove from heat and add flour all at once. Stir vigorously until a dough forms.
- Return pan to low heat, stirring until dough pulls away from sides and dries slightly (1–2 minutes).
- Transfer to a mixing bowl. Beat in eggs one at a time, mixing well after each, until smooth and pipeable.
- Pipe onto tray in rounds (about 2 inches wide).
- Bake 20–25 minutes until golden and puffed. Do not open oven early.
- Let cool completely before filling.
- Heat milk until steaming for the filling.
- In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
- Slowly add hot milk, whisking constantly. Return to saucepan.
- Cook over medium heat, whisking until thickened.
- Remove from heat, stir in vanilla and butter.
- Cover with plastic wrap directly on surface, chill until cold.
- Once chilled, fold in whipped cream for a lighter texture.
- Slice puffs in half horizontally.
- Pipe vanilla cream generously inside.
- Replace tops and dust with powdered sugar.

- Ensure eggs are at room temperature for better incorporation.
- Do not open the oven door while baking to maintain puffiness.
- Chill the cream filling thoroughly for best results.
