Golden Spiral Turkish Börek is a delicious pastry filled with savory meat and spices, wrapped in flaky layers of dough.

- 1 package phyllo dough (or 4 large Turkish yufka sheets)
- ½ cup melted butter (or olive oil) for brushing
- 1 lb (450 g) ground beef or lamb
- 1 large onion, finely chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp paprika
- ½ tsp ground cumin
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp parsley, chopped
- 1 egg yolk
- 2 tbsp milk or yogurt
Instructions
- Heat olive oil in a skillet, sauté onions until soft.
- Add garlic, then ground beef. Cook until browned.
- Stir in tomato paste, paprika, cumin, salt, and pepper. Cook 2–3 minutes more.
- Mix in chopped parsley, then remove from heat. Let cool slightly.
- Lay one sheet of phyllo (or yufka) on a flat surface. Brush lightly with melted butter.
- Place a line of meat filling along one long edge.
- Roll up into a long log, sealing edges.
- Coil the log into a spiral on a greased baking tray.
- Repeat with remaining sheets, attaching each new roll to continue the spiral.
- Preheat oven to 375°F (190°C).
- Brush the spiral generously with egg wash.
- Bake 35–40 minutes, until golden brown and crispy.
Notes
- For a vegetarian option, substitute the meat with a mixture of sautéed vegetables and cheese.
- Make sure to keep the phyllo dough covered with a damp cloth to prevent it from drying out.
- Serve warm with yogurt or a side salad for a complete meal.
