A delicious and easy fried rice recipe that makes use of day-old rice for the best texture.

- 2 cups cooked rice (preferably day-old for best texture)
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs beaten
- 3 pieces green onions, chopped
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Prep your ingredients by gathering all of them. Ensure to use day-old rice as it’s less sticky.
- Heat the oil in a large skillet or wok over medium-high heat until hot but not smoking.
- Add the mixed vegetables and sauté for about 3-4 minutes until they’re vibrant and slightly tender.
- Push the veggies to one side of the skillet, pour in the beaten eggs, and scramble until fully cooked.
- Next, add the cooked rice to the skillet, breaking up any clumps with a spatula and mixing everything well.
- Drizzle in the soy sauce, add salt and pepper, and mix again to ensure each grain of rice is well-flavored.
- Finally, stir in the chopped green onions just before serving.
- Dish out your fried rice, and enjoy!
Notes
- Day-old rice is less sticky and ideal for frying.
- Feel free to choose your favorite veggies.
