Description

Delicious and fluffy cottage cheese pancakes, also known as Syrniki, perfect for a delightful breakfast.


Ingredients

  • 1 cup (250 g) cottage cheese or farmer’s cheese
  • 2 large eggs
  • 3 tbsp sugar
  • ½ tsp vanilla extract
  • ½ cup (65 g) all-purpose flour (plus more for dusting)
  • ½ tsp baking powder
  • Pinch of salt
  • 23 tbsp butter or light oil (for frying)
  • Maple syrup or honey (to serve)
  • Fresh fruit (apple slices, berries, or bananas) (to serve)

Instructions

  1. Mash cottage cheese with a fork until mostly smooth.
  2. Add eggs, sugar, and vanilla, whisking until combined.
  3. Stir in flour, baking powder, and salt until a thick, spoonable batter forms.
  4. Lightly flour your hands and form small patties (about 2 tbsp of batter each).
  5. Dust lightly with flour on both sides.
  6. Heat butter or oil in a skillet over medium heat.
  7. Cook pancakes for 2–3 minutes per side until golden brown and cooked through.
  8. Stack pancakes, drizzle with warm maple syrup or honey, and serve with apple slices or your favorite fruits.

Notes

  • For a lighter texture, use farmer’s cheese instead of cottage cheese.
  • Adjust the sweetness by adding more or less sugar according to your taste.
  • These pancakes can be made ahead and reheated in a skillet or microwave.
