Delicious and fluffy cottage cheese pancakes, also known as Syrniki, perfect for a delightful breakfast.
Ingredients

- 1 cup (250 g) cottage cheese or farmer’s cheese
- 2 large eggs
- 3 tbsp sugar
- ½ tsp vanilla extract
- ½ cup (65 g) all-purpose flour (plus more for dusting)
- ½ tsp baking powder
- Pinch of salt
- 2–3 tbsp butter or light oil (for frying)
- Maple syrup or honey (to serve)
- Fresh fruit (apple slices, berries, or bananas) (to serve)
Instructions
- Mash cottage cheese with a fork until mostly smooth.
- Add eggs, sugar, and vanilla, whisking until combined.
- Stir in flour, baking powder, and salt until a thick, spoonable batter forms.
- Lightly flour your hands and form small patties (about 2 tbsp of batter each).
- Dust lightly with flour on both sides.
- Heat butter or oil in a skillet over medium heat.
- Cook pancakes for 2–3 minutes per side until golden brown and cooked through.
- Stack pancakes, drizzle with warm maple syrup or honey, and serve with apple slices or your favorite fruits.
Notes
- For a lighter texture, use farmer’s cheese instead of cottage cheese.
- Adjust the sweetness by adding more or less sugar according to your taste.
- These pancakes can be made ahead and reheated in a skillet or microwave.
