- 2 ½ cups (320 g) all-purpose flour
- ¼ cup (50 g) sugar
- 2 ¼ tsp (1 packet) instant yeast
- ½ tsp salt
- ½ cup warm milk
- 2 tbsp warm water
- 3 tbsp unsalted butter, softened
- 2 egg yolks
- 1 whole egg
- Oil for frying
- Powdered sugar for dusting
- 1 cup heavy cream, cold
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ½ cup mascarpone or cream cheese (softened)
- ½ cup berry jam (raspberry, strawberry, or mixed berry)
Instructions
- In a bowl, mix: flour, sugar, yeast, salt.
- Add warm milk + warm water + eggs + softened butter.
- Mix and knead until smooth and elastic (8–10 min by hand).
- Cover and let rise 1–1½ hours, until doubled.
- Punch down dough and roll it 1 inch thick.
- Cut rounds with a large cutter.
- Place on parchment and let rise 30–45 minutes until puffy.
- Heat oil to 170–175°C (340–350°F).
- Fry 1–2 minutes per side until golden brown.
- Let rest on paper towels.
- Toss lightly in powdered sugar while still warm.
- Whip heavy cream + powdered sugar + vanilla to soft peaks.
- Add mascarpone and whip just until thick and cloud-like.
- Keep chilled.
- Cut each donut horizontally like a sandwich.
- Pipe a thick swirl of cloud cream inside.
- Spoon or pipe berry jam right in the center.
- Add a little more cream if needed.
- Place the donut top back on.
- Dust with powdered sugar to finish.
