Ingredients

  • 2 ½ cups (320 g) all-purpose flour
  • ¼ cup (50 g) sugar
  • 2 ¼ tsp (1 packet) instant yeast
  • ½ tsp salt
  • ½ cup warm milk
  • 2 tbsp warm water
  • 3 tbsp unsalted butter, softened
  • 2 egg yolks
  • 1 whole egg
  • Oil for frying
  • Powdered sugar for dusting
  • 1 cup heavy cream, cold
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ cup mascarpone or cream cheese (softened)
  • ½ cup berry jam (raspberry, strawberry, or mixed berry)

Instructions

  1. In a bowl, mix: flour, sugar, yeast, salt.
  2. Add warm milk + warm water + eggs + softened butter.
  3. Mix and knead until smooth and elastic (8–10 min by hand).
  4. Cover and let rise 1–1½ hours, until doubled.
  5. Punch down dough and roll it 1 inch thick.
  6. Cut rounds with a large cutter.
  7. Place on parchment and let rise 30–45 minutes until puffy.
  8. Heat oil to 170–175°C (340–350°F).
  9. Fry 1–2 minutes per side until golden brown.
  10. Let rest on paper towels.
  11. Toss lightly in powdered sugar while still warm.
  12. Whip heavy cream + powdered sugar + vanilla to soft peaks.
  13. Add mascarpone and whip just until thick and cloud-like.
  14. Keep chilled.
  15. Cut each donut horizontally like a sandwich.
  16. Pipe a thick swirl of cloud cream inside.
  17. Spoon or pipe berry jam right in the center.
  18. Add a little more cream if needed.
  19. Place the donut top back on.
  20. Dust with powdered sugar to finish.
