Ingredients

- 1 can (15 oz) organic chickpeas, drained and rinsed
- 1 cup diced celery
- 1/4 cup diced red onion
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp Dijon mustard
- 3 tbsp mayonnaise (regular or vegan)
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large mixing bowl, mash the drained chickpeas with a fork until chunky.
- Stir in the diced celery and red onion until evenly mixed.
- Add lemon juice, Dijon mustard, and mayonnaise; stir until well combined.
- Season with salt, pepper, and fresh dill to taste.
- Chill in the refrigerator for at least 30 minutes before serving for optimal flavor.
