- 3 cups plus 2 tbsp all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon fine sea salt
- 1 teaspoon ground cinnamon (for dough)

- ¼ teaspoon ground nutmeg (for dough)
- ¼ teaspoon ground cloves (optional, for dough)
- 1 cup (226g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar (for dough)
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- ½ cup (120g) unsweetened apple sauce or apple puree
- ½ cup (100g) granulated sugar (for coating)
- 2 tablespoons ground cinnamon (for coating)
- ½ teaspoon ground ginger (for coating)
- ¼ teaspoon ground nutmeg (for coating)
- ⅛ teaspoon ground cloves (optional, for coating)
Instructions
- In a large bowl, cream together the butter and sugar until smooth.
- Add the eggs, vanilla, and apple sauce, mixing well.
- In another bowl, combine the flour, cream of tartar, baking soda, salt, and spices.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Refrigerate dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a small bowl, mix together the granulated sugar and spices for coating.
- Form dough into balls, roll in the sugar mixture, and place on prepared sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on a wire rack.
Notes
- Cookies can be stored in an airtight container for up to a week.
- For a softer cookie, underbake slightly.
