  1. Start by hulling and halving the strawberries. This will help release their juices and make blending easier.
  2. In a blender, combine the halved strawberries, sugar, lemon juice, water, and a pinch of salt. Blend until smooth and the mixture is uniform.
  3. Before proceeding, taste the mixture. Adjust sweetness by adding more sugar if desired or balance with an extra squeeze of lemon juice.
  4. If you prefer an ultra-smooth sorbet, strain the mixture through a fine-mesh sieve to remove seeds. This step is optional, as some prefer the texture.
  5. Pour the blended mixture into a shallow container. A metal pan works best for even freezing.
