Description

Mini no-bake chocolate cheesecakes with a fudgy chocolate crust, smooth dark chocolate filling, and bright raspberry sauce on top. Perfect for parties, gifting, or when you want a gourmet treat in small bites.


Ingredients

  • 1 ½ cups crushed chocolate cookies (Oreos or chocolate biscuits)
  • 4 tbsp unsalted butter, melted
  • 1 tbsp sugar (optional)
  • Pinch of salt
  • 8 oz (226 g) cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • ¾ cup melted dark chocolate (60–70%)
  • ½ cup dark or semisweet chocolate chips
  • ¼ cup warm heavy cream
  • 1 ½ cups fresh or frozen raspberries
  • 23 tbsp sugar
  • 1 tsp lemon juice
  • Optional: 1 tbsp water
  • Extra whole raspberries for garnish

Instructions

  1. Make the Chocolate Crust: Mix crushed chocolate cookies, melted butter, sugar, and salt. Press firmly into lined muffin cups or silicone molds. Freeze 10 minutes to set.
  2. Make the Dark Chocolate Cheesecake Filling: Beat cream cheese until smooth. Add powdered sugar and vanilla. Pour in melted dark chocolate and beat until creamy. Whip the heavy cream separately until thick, then fold into chocolate mixture. Spoon filling onto the chilled crusts and smooth the tops. Refrigerate at least 2 hours (or freeze for faster setting).
  3. Make the Chocolate Ganache: Pour warm cream over the chocolate chips. Let sit 1 minute, then whisk until silky. Spread a thin layer over each chilled cheesecake bite.
  4. Make the Raspberry Topping: Add raspberries, sugar, and lemon juice to a saucepan. Cook on medium heat 5–7 minutes until thick, jammy, and glossy. Let cool completely. Spoon a generous layer over the chocolate ganache.
  5. Chill & Garnish: Refrigerate until fully set. Top each bite with a fresh raspberry before serving.

  • For a gluten-free version, use gluten-free chocolate cookies.
