- 2 lbs Yukon Gold potatoes, cut into bite-sized chunks
- 4–5 cloves fresh garlic, minced
- 3 tbsp olive oil
- 2 tbsp Juice of 1 lemon
- Salt and pepper, to taste
- 1 tbsp fresh herbs (optional): rosemary or thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the Yukon Gold potatoes thoroughly; cut into uniform chunks.
- In a large bowl, combine potato chunks with minced garlic, olive oil, salt, pepper, and lemon juice. Toss until evenly coated.
- Spread the seasoned potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes until golden brown and crispy, shaking the pan halfway through.
- If using fresh herbs, add them during the last 10 minutes of roasting.
- Serve hot and enjoy!
