Description

These roasted Yukon Gold potatoes are seasoned with garlic, olive oil, and fresh herbs for a delicious side dish.


Ingredients

  • 2 lbs Yukon Gold potatoes, cut into bite-sized chunks
  • 45 cloves fresh garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp Juice of 1 lemon
  • Salt and pepper, to taste
  • 1 tbsp fresh herbs (optional): rosemary or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the Yukon Gold potatoes thoroughly; cut into uniform chunks.
  3. In a large bowl, combine potato chunks with minced garlic, olive oil, salt, pepper, and lemon juice. Toss until evenly coated.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Roast for 30-35 minutes until golden brown and crispy, shaking the pan halfway through.
  6. If using fresh herbs, add them during the last 10 minutes of roasting.
  7. Serve hot and enjoy!
