Instructions
- Clean mushrooms with a damp cloth (avoid soaking). Pat dry completely. Tear into bite-sized pieces if using oyster mushrooms.
- In a bowl, whisk together flour, cornstarch, baking powder, garlic powder, paprika, and salt. Slowly add sparkling water until smooth, slightly thick batter forms.
- Heat oil in a deep pan to 350°F (175°C). Dip mushrooms in batter, shaking off excess. Fry in batches until golden brown and crispy (2–3 minutes). Remove and drain on paper towels.
- Sprinkle hot chips with salt, paprika, or Cajun seasoning. Serve immediately for the best crunch.
