  • 6 strips of thick-cut bacon
  • 2 medium russet potatoes, diced into small cubes
  • 6 large eggs
  • 2 tbsp milk or cream
  • 1 cup (115 g) shredded cheddar or Monterey Jack cheese
  • 2 tbsp butter or oil
  • Salt and black pepper, to taste
  • Pinch of smoked paprika (optional)
  • 1 tbsp chopped parsley or chives (optional, for garnish)
  • 4 large flour tortillas (10-inch size)
  • Sour cream or chipotle mayo (optional for spreading inside)

Instructions

  1. Heat a large skillet over medium heat. Cook bacon until crispy, then remove and drain on paper towels. Chop into bite-sized pieces and set aside. Leave about 1 tablespoon of bacon fat in the pan for flavor.
  2. In the same skillet, add diced potatoes. Season with salt, pepper, and smoked paprika. Cook for 10–12 minutes, stirring occasionally, until golden brown and crispy on all sides. Remove from the skillet and set aside.
  3. In a bowl, whisk eggs with milk, salt, and pepper. Melt butter in a skillet over low-medium heat. Pour in the eggs and cook gently, stirring until fluffy and just set. Remove from heat — don’t overcook; they’ll cook more inside the burrito.
  4. Warm tortillas slightly for easier folding. Layer scrambled eggs, crispy potatoes, bacon pieces, and shredded cheese in the center. Add a little sour cream or chipotle mayo if desired. Fold the sides over and roll tightly like a burrito.
  5. Wipe the skillet clean and heat it to medium. Add a little butter or oil and place burritos seam-side down. Cook for 2–3 minutes per side until golden and crispy.
