Delicious and crispy air fryer sweet potato fries that are easy to prepare and perfect for any occasion.

- 2 large sweet potatoes (peeled and cut lengthwise, mine weighed about a couple of pounds total)
- 1 1/2 tablespoons cornstarch
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Slice the sweet potatoes using a fry cutter for evenly shaped fries.
- Microwave the potatoes for 3-4 minutes to soften them.
- Place the sliced sweet potatoes in a large bowl with cold water and soak for an hour.
- Remove the sweet potatoes from the water and dry completely.
- Sprinkle the cornstarch throughout the sweet potatoes.
- Sprinkle in the paprika, garlic powder, salt, and pepper.
- Place the fries in the air fryer basket and spray with olive oil. Do not overcrowd the basket.
- If necessary, cook in batches. If you see white spots of cornstarch on the fries, spray them with olive oil.
- Adjust the air fryer temperature to 380 degrees and cook for 23-25 minutes.
- Set a timer for 10 minutes and shake the basket at the 10-minute mark.
- Use your judgment. If you like crispy fries, cook them longer and check periodically.
- Cool before serving.
