Description
A decadent twist on traditional French toast, infused with the rich flavors of crème brûlée.
Ingredients

- 1 cup (240 ml) heavy cream
- 1 cup (240 ml) whole milk
- 4 large egg yolks
- ½ cup (100 g) granulated sugar
- 1 tsp vanilla extract
- Pinch of salt
- 6 thick slices brioche or challah bread
- 2 tbsp unsalted butter (for cooking)
- ¼ cup (50 g) granulated sugar (for caramelizing)
- Maple syrup, for serving
Instructions
- In a saucepan, heat cream and milk until just warm (do not boil).
- In a bowl, whisk egg yolks, sugar, vanilla, and salt until pale.
- Slowly whisk in warm cream mixture.
- Place bread slices in a shallow dish.
- Pour custard over, letting the bread soak 10–15 minutes per side until saturated.
- Heat butter in a large skillet over medium heat.
- Cook soaked bread slices 3–4 minutes per side, until golden brown and cooked through.
- Sprinkle each toast slice with a thin, even layer of sugar.
- Use a kitchen torch to caramelize sugar until golden and glassy.
- (Alternatively, place under oven broiler for 1–2 minutes, watching closely.)
- Stack warm slices, drizzle with maple syrup, and serve immediately.
Notes
- Ensure the cream mixture is warm but not boiling to avoid cooking the egg yolks.
- For best results, use day-old bread for soaking.
- Watch the sugar closely while caramelizing to prevent burning.
