Ingredients

  • 1 cup (240 ml) whole milk
  • 4 large egg yolks
  • ½ cup (100 g) granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 6 thick slices brioche or challah bread
  • 2 tbsp unsalted butter (for cooking)
  • ¼ cup (50 g) granulated sugar (for caramelizing)
  • Maple syrup, for serving

Instructions

  1. In a saucepan, heat cream and milk until just warm (do not boil).
  2. In a bowl, whisk egg yolks, sugar, vanilla, and salt until pale.
  3. Slowly whisk in warm cream mixture.
  4. Place bread slices in a shallow dish.
  5. Pour custard over, letting the bread soak 10–15 minutes per side until saturated.
  6. Heat butter in a large skillet over medium heat.
  7. Cook soaked bread slices 3–4 minutes per side, until golden brown and cooked through.
  8. Sprinkle each toast slice with a thin, even layer of sugar.
  9. Use a kitchen torch to caramelize sugar until golden and glassy.
  10. (Alternatively, place under oven broiler for 1–2 minutes, watching closely.)
  11. Stack warm slices, drizzle with maple syrup, and serve immediately.
