Description

Ingredients

  • 3 large Eggs (room temperature)
  • 3/4 cup Sugar (superfine)
  • 1/2 cup Butter (unsalted)
  • 1 tsp Baking powder (fresh)
  • 2 cups Heavy cream (whipped to soft peaks)
  • 1 tbsp Gelatin (or agar-agar for vegetarian)
  • 1/4 cup Sugar (adjust to taste)
  • 1 tsp Vanilla extract
  • 1 cup Mixed berries
  • 1 cup Pineapple or kiwi (optional for tropical flair)
  • 1 cup Additional heavy cream (whipped to soft peaks)
  • 2 tbsp Powdered sugar

Instructions

  1. Prepare the Sponge Cake: Begin by baking the sponge cake until light and golden. Allow cooling completely on a wire rack.
  2. Make the Mousse: In a bowl, whip the heavy cream with gelatin and sugar until soft peaks form. Fold in the vanilla extract.
  3. Layer Assembly: Place cooled sponge at the bottom of a springform pan. Pour half the mousse, add mixed berries, then repeat with remaining mousse and top with fruits.
  4. Chill: Cover and refrigerate for at least 4 hours, until fully set.
  5. Serve: Remove the springform pan and decorate with whipped cream and fruits.
