A delightful layered mousse cake featuring a sponge base topped with mixed berries and a rich whipped cream mousse.

- 1 cup All-purpose flour
- 3 large Eggs (room temperature)
- 3/4 cup Sugar (superfine)
- 1/2 cup Butter (unsalted)
- 1 tsp Baking powder (fresh)
- 2 cups Heavy cream (whipped to soft peaks)
- 1 tbsp Gelatin (or agar-agar for vegetarian)
- 1/4 cup Sugar (adjust to taste)
- 1 tsp Vanilla extract
- 1 cup Mixed berries
- 1 cup Pineapple or kiwi (optional for tropical flair)
- 1 cup Additional heavy cream (whipped to soft peaks)
- 2 tbsp Powdered sugar
Instructions
- Prepare the Sponge Cake: Begin by baking the sponge cake until light and golden. Allow cooling completely on a wire rack.
- Make the Mousse: In a bowl, whip the heavy cream with gelatin and sugar until soft peaks form. Fold in the vanilla extract.
- Layer Assembly: Place cooled sponge at the bottom of a springform pan. Pour half the mousse, add mixed berries, then repeat with remaining mousse and top with fruits.
- Chill: Cover and refrigerate for at least 4 hours, until fully set.
- Serve: Remove the springform pan and decorate with whipped cream and fruits.
Notes
- This mousse cake can be made a day in advance for better flavor.
- Feel free to substitute the berries based on seasonal availability.
